TATASHE was established in 2016 with the dream of bringing Afro-Caribbean style cooking and flavours to Denmark. Tatashe is the local word for red bell pepper and a chili from the Kano region of Nigeria and is commonly used for sauce base and aromatic stews in most West African countries and the Caribbean Islands. On many street corners in the Caribbean Islands there is a jerk drum. A jerk drum is an oil drum cut in half.
These drums are fired with charcoal, which enhances the spicy, smoky taste. Jerk is a style of cooking in the Caribbean where pork and chicken are marinated for a long period of time in a hot spice mixture called jerk seasoning. There are different recipes of jerk marinate, and of course TATASHE has its own original jerk seasoning.
